How To Prepare Basmati Fried Rice

Today I'll be teaching you how to make a very unique dish that's prepared for party ceremonies. We all know the normal long grain rice, and our local Ofada rice. There is another kind of rice called "Basmati Rice".The Basmati Fried Rice is a simply Nigerian Style Fried Rice made with Basmati instead of Long Grain Rice.
You will agree with me when I say that the Fried Rice is the second most popular rice dish in Nigeria. A Nigerian proper party is not complete without the fried rice. Some Basmati rice brands can be a pain to work with, so it's advisable to go for tried and tested brands. The Basmati rice has a delicious flavour when you prepare it.
Let's go and get our necessary ingredients for cooking.
Ingredients
~ 5 Cups of Basmati rice
~ 2 Cooking Spoons Vegetable oil
~ 4-5 Cups Chicken Stock
~ Mixed Vegetables (Green peas, Runner beans, Green pepper, Sweetcorn, Carrot)
~ 1 Onion, Chopped and ready
~ 1-4 cups Cooked Shrimp/Prawns
~ 1 cup Liver (cooked and sliced well)
~ 1 Cup Chopped Spring Onions
~ 4 seasoning Cubes
~ Your Curry Powder
~ 1 Tablespoon Dried Thyme
~ Salt (for taste)
Preparation
~ First place a pot on medium heat and add your vegetable oil then let it heat up.
~ When the oil heats up, add the washed Basmati Rice and fry for 2-4 minutes.
Always ensure to stir every now and then to prevent burning.
~ After frying, add a good amount of the Chicken Stock ( not too much liquid, just enough to cover).
~ If you haven't got enough Stock, add water to it.
~ Add the Chopped Onions, Curry Powder, salt, thyme, seasoning cubes.
~ it's important to know that your chicken stock has a good amount of salt already, so be very careful when adding salt and seasoning.
~ Then cover tightly and leave to cook.
~ Unlike your the long grain rice, the Basmati rice needs enough trapped heat to cook. So it's important to cover your pot with foil paper before placing the lid on.
~ When it's tender but not fully cooked, add your Mixed Vegetables and diced Liver.
~ Stir very well and combine. Always taste from time to time to adjust your seasoning if necessary.
~ Then add the chopped Spring Onions and stir and combine. Cover tightly and let it cook till it's done.
~ Then add the cooked shrimp/Prawns, cover and cook for 3 to 4 minutes.
~Then try to reduce the heat of your gas and allow to steam with the residual heat for 3 minutes.
