Agege Bread Pizza

Ingredients

Agege bread
Tomato sauce
Grated cheese (cheddar or mozzarella)
Variety of chopped vegetables (eg onion, green pepper, etc)
Chicken shreds (preferably cooked or roasted chicken. Other types of meat can also be used.)
Fresh herbs (basil or thyme)
Salt and pepper
Olive oil

Methods:
Slice the bread across its breadth and place on an oven tray. 
Separately, make some tomato sauce by mixing some tomato paste, olive oil, warm water and salt and pepper in a bowl. 
Spread sauce on the sliced bread evenly. Then top with grated cheese, followed by chopped onions, green peppers and shredded chicken. (Also add other toppings of your choice.) 
Drizzle with some extra virgin olive oil. 
Then place in a pre-heated oven with the top grill on. This will allow the pizza to cook from the top. Remember the bread is already cooked so it would not need much further cooking. 
Allow to cook for about 10 minutes, checking regularly to avoid burning.
Serve hot.... I promise you your kids will ask for more.

Steps On How To Prepare Carrot Rice

Carrot jollof rice

* 2 & half cups of rice
* 5 carrots
* Half of a red and half of a yellow bell pepper
* 1 habanero pepper
* 1 Fried fish (mackerel)
* Fish brot
* Vegetable oil
* Knorr cubes
* Curry powder, paprika, nutmeg & thyme
* Salt

For garnishing:
* 1 sliced fresh tomato
* Half sliced green bell pepper
* Half sliced onion.

Procedure
* Perboil your rice for 5 or 7 minutes and rinse with clean water.
* While the rice is boiling, wash, cut and add your carrots in a blender with some water to the level of the carrots (as shown in the picture), after blending, strain the carrots to get the juice and don't throw the shaft away.
* Blend your red and yellow bell peppers together with the 1 onion and habanero pepper but dont add water while blending it.
* Now pour some oil in your cooking pot. (I used the oil that I used to fry my fish), once the oil heats up, add a teaspoon of thyme and pour in the blended peppers and onion, together with the carrot shaft and fry for 5 to 10 minutes.
* After frying, add a teaspoon of the curry powder, nutmeg & paprika, then pour in your fish brot, (The liquid used in cooking the fish), stir it and add your per boiled rice and mix everything very well then pour in the carrot juice, cover the pot and cook on a medium heat till the liquid is almost dried, then open it and stir it and cover it again, this time with a cooking sheet or foil paper and allow the rice to steam on a low heat till all the liquid dries up, (covering it with the cooking sheet will help to keep the taste of your jollof rice in tact, gives it a Smokey party jollof rice aroma and make it soft and separate). But make sure you check on it to avoid burning and if the rice is not done you can add a tiny bit of water and cook till it's perfectly done! Then garnish it with the tomato, onion and green bell pepper and add your fried fish on top.
