Preparing Ghana Abom" With Twist
~2.4 mins read
Source: Fonibia
People always say Ghana has been blessed with amazing resources though a cliché, it is not false. Resources aren't the only things Ghana is blessed with. Ghana has been blessed with plants full of nutrients, vitamins and all the goodies our bodies need to stay healthy while boosting our immune system.
Kontomire leaves are the leaves of the Cocoyam plant.
These leaves contain a great amount of nutrients and vitamins that help the human body repair worn out tissues while keeping it strong and healthy. Preparing Kontomire Stew is as easy as memorising the English language alphabets.
Obviously you'd need Kontomire leaves, palm oil, salted tilapia, powdered pepper, some ginger, garlic, onions, green pepper, tomatoes, tomato paste (optional) any fish or meat of your choice, groundnut and salt to taste.
Cut the stalk of the leave and wash the Kontomire leaves under running water. After, put them in a saucepan add some water and leave to boil on the stove for about 5 to 8 minutes.

Whilst doing this, prepare your salted fish and the fish of your choice by cutting the fins and gills, wash it and put in a bowl. Slice your onions, ginger, garlic and tomatoes and dvide them into two. Grind half the tomatoes, green pepper, ginger garlic and onions in an earthenware bowl and add a pinch of salt to taste. Take half or as much of the mixture and keep in a bowl for later use.
The next step gives a different taste and aroma to the stew. Grind your groundnut (as many as you want) in addition to the mixture in the earthenware bowl then pour your cooked Kontomire leaves into the mixture little by little (depending on its quantity) in the earthenware bowl and grind to your satisfaction.
To get some sauce for the mixture in the earthenware bowl, pour some palm oil into a small saucepan, wait a while to allow the oil heat and put your salted tilapia into it to fry. After frying, add your sliced onions, powdered pepper, tomato paste (optional), tomatoes, and stir till it simmers and cooks. Put your fish into the sauce, add the grinded spices you left earlier to the sauce, with salt and any other seasoning of your choice.
After this, pour your palm oil sauce and fish into the Kontomire mixture in the earthenware bowl and mix properly to allow even distribution of the sauce in the mixture.
To keep your now ready stew warm, put your earthenware bowl on the stove on a low heat for about 5 to 10 minutes. This will keep your stew warm for about 30 minutes.
