HOW TO MAKE ACHICHA AND FIO-FIO

Nigeria is blessed with a lot of delicacies. Achicha smashed dried cocoyam), a southeastern delicacy is one of the meals that will leave you wanting more. If you ever visit the East, try this dish and youd be glad you did.

Ingredients
Fio-fio (Pigeon peas)
Achicha (smashed dried cocoyam)
Six bulbs of red onion
3 spoonfuls of palm oil
Fresh pepper
Scent leaf
Seasoning
Salt

Method
1. Wash your fio-fio (after picking out the good ones the way you do beans). In a pot, pour water, add the fio-fio and leave to cook for 30 minutes. Ensure your water is above the level of the fio-fio.
2. Drain the water, wash the fio-fio, pour fresh water into the pot, pour the fio-fio back and cook until it is soft.
3. In a bowl, pour water, then the achicha and soak for 10 minutes. Wash thoroughly until there is no sand in it then drain the water. Then cook in a separate pot for 30 minutes.
4. Drain the water used to cook the achicha. Mix the achicha with the fio-fio.
5. In a pan, fry the palm oil for 2-3 minutes. Add the onion, pepper, seasoning, scent leaf, and stir. Allow cooking for 10 minutes but remember to taste while cooking.
6. Mix the sauce with the food and stir until it is evenly distributed.
Enjoy.
NOTE: Some people do not like ukpaka in theirs and it is okay.
You can also eat it with fried fish.

HOW TO MAKE THE VEGAN MILK BREAD

Vegan Milk Bread is one goodness that everyone should have a taste of and surprisingly, it is not difficult to bake.

Trust me, after having a taste, you will always go back to it.

Ingredient

380g (2.5 cups) of flour
3 tbsp of sugar
tbsp of salt
1/3 cup of boiling water
4 tsp of vegan butter
cup of warm soymilk (+ 1 tbsp)
2 tsp of yeast
1 tsp of maple syrup
Method
In a bowl, pour your flour, salt, sugar and mix. Then pour boiling water and stir.

In another bowl, mix your yeast and cup of warm soymilk. Then add to the flour mixture.

Mix this with your hands until it comes together.

Add your vegan butter and knead until it is nice and smooth. Then cover with a napkin for 30 minutes for it to rise.

After 30 minutes, remove the napkin and punch it. Then divide it into 6-8 pieces.

Take one piece, stretch and fold it into a ball. Do it for other balls and let it sit for 30 minutes (cover with a napkin).

In another bowl, mix your maple syrup and tsp of soymilk. Brush the mixture on the balls and bake for 25-30 minutes in an oven.

(Set your oven to 190F or 375F).

NOTE: Using boiling water is less time consuming and it makes the bread have light crumbs.
