The Easiest Way To Make Your Akara

Akara is a type of fritter made from cowpeas. It is found throughout West African and Brazilian cuisines. The dish is traditionally encountered in Brazil's northeastern state of Bahia, especially in the city of Salvador. Acarajé serves as both a religious offering to the gods in the Candomblé religion and as street food. The dish was brought by enslaved peoples from West Africa, and can still be found in various forms in Nigeria, Ghana, Togo, Benin, Mali, Gambia, and Sierra

One of the reasons I love this snack is that it can never change, the preparation remains the same.
The first thing you need to do if you want to prepare Akara is to first buy beans. Make sure it is enough. For starters, I will advise you to buy two cups of beans.
Akara is very easy to make, and as long as you have the ingredients useful in your house within 25 minutes you are done.
Akara is a Nigerian street food made from deep-fried bean batter. Akara is also known as Bean Cake or Bean Fritters, it is also known as Acarajé by Brazilians although the Brazilian recipe calls for the addition of shrimps to the batter. Akara is usually eaten as a snack, appetizer, or as a breakfast dish, served with Custard, or Oatmeal.
Ingredients
Brown or White Beans
Groundnut Oil for frying
Red Pepper
Scotch Bonnet (Atarodo) optional
Onion
A little bit of Tablespoon Ground Pepper
Maggi Cubes
Salt to taste
Procedure.
1. Pick and wash your beans, then soak in water and peel. You can peel by hand or simply soak for 5 minutes in lukewarm water. Pour the beans in your electric blender and using the pulse function on your blender, pulse a couple of times. The beans will break, peeling most of the beans. Then pour the contents into a bowl and finish peeling by hand. This method will save you time and energy.
2. When it’s peeled, blend till smooth in a mill or electric blender. Do not add too much water. You’ll need to end up with a thickish consistency. If you add too much water, you’ll end up with a very flat Akara. Then add onions, pepper and scotch bonnet and grind together
If you end up using too much water, sieve out the water contents through a sieve, but remember the nutrition will reduce. This method is not advisable
3. Now, you need to incorporate air into your Akara batter. The air helps with the fluffiness and plumpness of Akara. You can use a whisk for this, whisk for at least 10 minutes till the batter becomes very fluffy or you can use a wooden spoon and stir vigorously in one direction for 10-12 minutes. Alternatively, you can use an electric hand mixer. See how fluffy mine looks after 8 minutes of mixing….
4. Next, add Maggi cubes into the batter, also add the ground pepper and salt. Mix very well …
5..Now, add groundnut oil into a deep frying pan or wok. Quantity should be enough to deep fry the Akara balls. Place on a hob on medium heat, around 180 degrees. Make sure the heat isn’t too high and not too low either. When it’s hot, begin to scoop the batter into the oil. You can use an ice cream scoop or spoon for this.
6. Fry till golden brown, this should take 3-4 minutes. Remember to turn them over for even frying…
7. Transfer into a paper towel-lined plate to soak up excess oil, And it’s ready to serve.

How to prepare Moi Moi with ease, using these 8 easy steps.
INGREDIENTS: 2 cups of black-eyed beans, 1 medium of onion, 2 medium sized tomatoes, 2 fresh pepper(depending how you want it, you can even add more), boiled eggs(optional), 2 tablespoons of grounded crayfish, 1 teaspoonful of salt, vegetable oil, 2 Maggi cubes, water.
HOW TO PREPARE:
Step 1: in a bowl, put in the quantity of black eyed beans you want to use and pour in water to cover the beans. Soak over night
Step 2: in the morning, gently Rob the beans together as you wash it to remove the peelings. If you are using an already peeled bean, all you need to do is that, just soak it overnight to make it soft.
Step 3: Put the cleaned bean in a blender and add onion to taste. A whole medium size onion. Also add your pepper and salt to taste. Add 2 medium sized tomatoes. Blend till mixture becomes a smooth paste.
Step 4: If you have already prepared bean flour, you don't need to follow the steps above just add your blended tomatoes, pepper and onion to the flour and mix into the smooth paste.
Step 5: Put the beans paste into a bowl and add the vegetable oil and mix. Slice your boiled egg into moderate sizes and add it to the paste. Add a little water to loosen the paste a little bit. Don't make it too light.
Step 6: Measure the beans paste into medium plates or cups, to a certain level so that it will have enough space for the beans to expand once it starts boiling.
Step 7: Get cooking pot with water inside, place the medium plates or cups that you fill with beans paste inside the cooking pot and cover it, cook for about 30 minutes.
Step 8: Until the beans paste looks like a baked cake, then serve your moi-moi with garri, pap or rice.
